How Long Does Fermentation Take? A Timing Reference by Family
Typical durations for vegetable, dairy, grain, legume and beverage ferments, why every range is wide, and what to measure instead of counting days.

How long do vegetable ferments take?
Seven to fourteen days at 18–22 °C is the working answer for sauerkraut, kimchi, turşu, brined cucumbers and most of the brined vegetable family. Within that window the batch passes from bubbling and cloudy in the first days to clean and sour by the end, as Leuconostoc gives way to Lactobacillus plantarum and the pH drops from about 6 to below 4.
The edges of the range are legitimate rather than exceptional. A finely shredded kraut in a warm kitchen is pleasant at three days, sour and one-dimensional. A kimchi held near 4 °C in the traditional manner keeps changing for months and is at its most complex long after any recipe would have called it finished. Salt stretches the timeline too: every additional percentage point of salt roughly doubles the time to reach the same acidity at the same temperature.
How long do dairy ferments take?
Hours, not days, because dairy ferments are inoculated with a dense, dominant culture rather than left to a spontaneous succession. Yoghurt sets in four to eight hours at 42–45 °C. Kefir, which is mesophilic, takes twelve to twenty-four hours on the counter. Cultured buttermilk and crème fraîche fall in the same overnight range.
The long dairy timelines belong to the products that come after the ferment. Straining adds hours. Ageing a cheese adds weeks to years. Drying kashk or qurut adds days of sun. In each case the fermentation itself was over before the first day ended; everything afterwards is concentration and maturation.
How long do grain and legume ferments take?
Grain batters and quick legume ferments run overnight to a couple of days. Dosa and idli batter needs 8–16 hours warm. Injera batter ferments over one to three days. Tempeh finishes in 24–48 hours at 30–32 °C, natto in about the same, and koji reaches its peak enzyme production at roughly 42–48 hours at 28–32 °C.
A sourdough starter is the outlier in this group, because there are two clocks. Building a new starter from flour and water takes seven to fourteen days before it raises bread reliably; once established, a single levain build is four to twelve hours depending on temperature and inoculation rate. Confusing the two is the most common reason a first sourdough is declared a failure on day four.
How long do beverages and long ferments take?
Kombucha's primary fermentation is 7–14 days at 22–28 °C, followed by two to four days of bottle conditioning for carbonation. Water kefir is faster — 24–48 hours. Wine and beer primary fermentations run days to weeks, with conditioning measured in weeks to months afterwards.
At the far end sit the salt-controlled pastes and sauces. Sweet white miso at around 5% salt is ready in three to eight weeks. Red miso at 12–13% may age two to three years. Traditional soy sauce is a multi-month to multi-year process. Nothing about these can be accelerated without changing what the product is, because the salt that makes the long timeline possible is the same salt that makes it necessary.
Why is the clock the wrong endpoint?
Because duration is an output, not an input. What you actually control is temperature, salt, substrate and inoculum; the time it takes is what those four produce. A recipe that says 'ferment for ten days' is quietly assuming a kitchen temperature it never states, and in a different kitchen it is simply wrong.
Measure the thing the timeline is a proxy for. For vegetables that is pH — below 4.6 within the first 72 hours, finishing between 3.4 and 3.8. For batters and doughs it is volume and aroma. For dairy it is set. For kombucha it is taste and pH. Log the temperature alongside the result, and after three batches you will have timings for your kitchen that are worth more than any published range, including this one.
