Temperature: The Most Underused Fermentation Variable
Why the same recipe tastes different in January and July, and how to use temperature deliberately rather than accidentally.

Same jar, different outcome
Temperature determines which organisms in a mixed population win. Every species has an optimum, and shifting the thermostat a few degrees changes the entire competitive landscape — and therefore the flavour.
At 18–22 °C, vegetable ferments follow the textbook Leuconostoc-to-Lactobacillus succession over one to two weeks. This is the reliable middle ground.
Going cold, deliberately
Traditional kimchi was buried in earthenware onggi and held near 4 °C for months. At those temperatures, Leuconostoc mesenteroides remains dominant far longer, producing carbon dioxide and mannitol. The result is fizzy, gently sweet, and impossible to reproduce in a warm kitchen.
A dedicated fridge set to 8–12 °C is the single biggest quality upgrade available to a serious home fermenter.
Going warm, carefully
Warmth is appropriate where you want speed and where the target organism is thermophilic: yoghurt at 42–45 °C, tempeh at 30–32 °C, koji at 28–32 °C. For vegetables it is almost always a mistake — above 27 °C, pectin-degrading organisms soften texture before acidity can protect the batch.
Record the temperature alongside every batch. A logged ferment is a repeatable ferment; an unlogged one is an anecdote.
