How Do I Know If My Kefir Grains Are Healthy or Contaminated?
What healthy milk and water kefir grains look, smell and behave like, which changes are stress rather than contamination, and the three signs that mean discard.

How can I tell if my kefir grains are healthy?
Judge them by what they do, not by what they look like. Healthy milk kefir grains, at about a 1:10 ratio by volume in whole milk at 20–25 °C, will thicken it and turn it pleasantly sour within 18 to 24 hours, consistently, batch after batch. Water kefir grains in a 5–8% sugar solution at the same temperature should bubble visibly within 24–48 hours and take the sweetness down noticeably.
Appearance is secondary but useful. Milk kefir grains should be irregular lumps with a folded, cauliflower-like surface, white to pale cream, elastic and rubbery when squeezed, ranging from a few millimetres to several centimetres. Water kefir grains look entirely different: translucent, pale amber, crystalline, gelatinous. The smell of milk grains should be clean cultured dairy — yeasty and sour, like fresh yoghurt with a bready edge.
Healthy grains also multiply. Milk kefir grains typically gain somewhere around 5–25% in mass per cycle under good conditions. Growth is a strong positive signal, though its absence on its own is not a verdict.
What do contaminated kefir grains look like?
There are three signs that mean discard, and none of them is subtle. Fuzzy, raised, coloured growth — blue, green, black, fuzzy pink — is mould, and grains cannot be rinsed clean of it because they are porous through their whole structure. Pink, orange or red slimy discolouration on the grains or across the surface of the milk indicates bacterial contamination rather than kefir organisms. A smell that is putrid, faecal, rotten-cheesy or solvent-like, as opposed to sharply sour, is the third.
Discard the grains and the batch together in any of those three cases. Kefir grains are a fixed matrix of bacteria and yeasts held in a polysaccharide gel; unlike a vessel they cannot be cleaned, and unlike a sourdough starter they cannot be diluted back to health.
Why have my kefir grains stopped growing?
Stalled growth is usually stress, not contamination. The common causes are temperature outside roughly 18–28 °C, too much milk for the quantity of grains, ultra-pasteurised or lactose-free milk, chlorinated tap water in water kefir, metal utensils left in prolonged contact, or a long spell in the fridge. Grains coming out of refrigeration routinely take three to five cycles to find their rhythm again.
Slimy, stringy, ropey grains are the most commonly misread symptom. That texture is usually over-fermentation or heat stress favouring the exopolysaccharide-producing organisms already in the culture, and it generally reverses with shorter cycles, a cooler spot and a lower grain-to-milk ratio. It is not mould and it is not a reason to throw them away.
Water kefir grains that shrink or dissolve are usually short of minerals. A pinch of unrefined sugar, a slice of dried fig or a small piece of clean eggshell in the jar provides what refined white sugar alone does not.
Can kefir grains recover once they look bad?
If the problem is stress rather than contamination, yes, and usually within a week. Put them in fresh whole milk at a generous ratio — more grains to less milk than usual — at stable room temperature, and change the milk every 24 hours without trying to drink the results for the first few cycles. Grains that have been neglected or refrigerated for a long time often need several rounds before they thicken milk properly again.
If the problem is mould, pink discolouration or a putrid smell, no. There is no rehabilitation path, and attempting one risks a food-safety problem for the sake of a culture that can be replaced.
Do water kefir and milk kefir grains fail differently?
They do. Milk kefir grains most often fail by stalling: they stop growing, stop souring milk on schedule, or turn slimy. Water kefir grains most often fail by dissolving, because their polysaccharide matrix depends on a mineral supply that plain sugar water does not provide.
The contamination signs are the same for both, but water kefir is the more exposed of the two. Milk kefir’s rapid acidification and dense established population make it fairly hostile to invaders; a sugar-water ferment starting near neutral pH is a more welcoming environment, and surface mould is correspondingly more common. If you are choosing between the two as a beginner, that difference is worth knowing.
