How to Judge Whether a Fermentation Guide Can Be Trusted
Five checks to run on any fermentation source before following its safety advice, including an honest account of how this site scores on them.

What makes a fermentation guide trustworthy?
Not confidence, and not production values. The most confident-sounding fermentation advice online is frequently the least examined, because certainty is cheap to write and caveats are not. What distinguishes a source worth following is whether it separates what it knows from what it is repeating.
Five checks cover most of it. Does it say where its numbers came from? Does it mark how certain each claim is? Does it admit what it does not know? Does it ever tell you to throw something away? And does it read as though it was written from sources, or assembled from other blogs?
None of these require you to know any microbiology. They are all things you can check by reading.
Why do numbers matter more than tone?
Because the numbers are what you will act on. A salt percentage, a pH threshold, a temperature, a freezing schedule — these are the parts of a fermentation guide that can hurt you if they are wrong, and they are also the parts most often copied without checking.
The specific failure to watch for is a plausible number with no origin. Fermentation writing is full of figures everyone repeats and nobody sourced, and in tone they are indistinguishable from figures that came out of a laboratory. If a guide gives you a threshold it should be able to say whether that came from a food-safety authority, from primary literature, or from common practice — and common practice is a legitimate answer, when it is stated.
The second thing to watch for is an absence-of-evidence claim doing the work of a guarantee. 'No documented case has been attributed to X' is a real and useful sentence, but it describes the state of the record, not the state of your jar.
What does a good source do when it does not know?
It says so, in the place where the number would have gone. That is rarer than it should be, because an explicit gap looks like a failure and a confident guess looks like expertise, and only one of them is honest.
It also distinguishes between kinds of not-knowing. 'The literature disagrees' is different from 'nobody has measured this', which is different again from 'this is well established for a close relative but not for this specific product'. Those three lead to different decisions, and collapsing them into one confident sentence throws away the information you needed.
And it tells you when to stop. A guide that never says discard is either covering only the easy cases or is more concerned with your disappointment than your safety.
How does this site score on its own checklist?
Two of the five clearly. Every entry here records how well documented it is, so a well-studied ferment and a rare regional preserve are not presented as equally certain. And where nothing has been established the entry says so rather than offering a plausible figure — a substantial share of the safety statements in this catalogue carry an explicit unknown, which is uncomfortable to publish and considerably more useful than the alternative.
One clear failure, and it is the first check on the list: this site does not currently publish a resolvable citation next to each safety statement. The statements are written from documented research, but a reader who wants to follow a specific threshold back to its origin cannot yet do that here. Claiming otherwise would fail this article's own second check, so it is said plainly instead. The mechanism to attach citations now exists; the citations themselves are being added statement by statement.
The remaining two it passes. Guidance here tells you to discard, repeatedly and in specific circumstances, and entries are written from a research base rather than assembled from other fermentation blogs. Apply the checklist to this page as readily as to any other — that is the point of publishing it.
What should a beginner do with all this?
Cross-check anything you intend to act on, and prefer sources that disagree with each other openly over a single confident one. Where a threshold matters — salt for a brine, pH for a vegetable ferment, a freezing schedule for raw fish — check it against a food-safety authority rather than a recipe site, because that is the one category of claim where being wrong is expensive.
Then measure rather than trust. A pH strip costs almost nothing and answers a question no guide can answer about your particular jar, in your particular kitchen, at your particular temperature. The best source in the world is still describing a general case.
And treat any guide's confidence as a claim in itself — one you are entitled to check.
