Finding a Ferment by Where It Comes From

Why fermentation traditions cluster the way they do, and why searching by country often works better than searching by name.

Why does it help to search by country?

Because for a large share of the world's ferments, the name is the hard part. Sinki, kabees el lift, thua nao and tungrymbai have no English equivalent, and someone who ate one at a relative's table often has no spelling to search with. A country is a thing you always know.

Searching geographically also surfaces the neighbours. Arrive at a country's page for one ferment and you get the rest of that country's documented traditions beside it — which is usually where the useful discovery happens, because ferments from one place tend to share method and substrate.

Origins are recorded per entry, with the country of origin and, where the attribution is contested between countries, the fact that it is contested rather than a silent decision in favour of one of them.

Why do the same ferments appear in unrelated places?

Because fermentation is a response to a problem, and the problems repeat. A herding society with more milk in spring than it can drink arrives at concentrated, salted, dried dairy whether it sits on the Iranian plateau, in the Caucasus or in Central Asia — kashk, qurut and keş are one answer given three times.

The same logic runs through the rest. Salt-heavy fish preparations show up wherever a season of abundance had to be carried through a season without one. Alkaline soybean ferments cluster across a band of Asia where soy was the protein and warmth was reliable. Lactic vegetable ferments appear wherever there was a winter.

This is why a map is more informative than an alphabetical list. Two ferments that sound unrelated often turn out to be the same technique applied to whatever was locally available, and seeing them next to their neighbours is what makes that visible.

What do you actually get for a country?

The ferments documented as originating there, each with its local name, the microorganisms involved where they are known, the method, and the safety statements that apply. Where an origin is disputed, that is recorded rather than resolved quietly.

Coverage is uneven, and it is worth saying so plainly. Some countries have a single documented entry; others have a dozen. That reflects what has been documented so far, not what exists — and the gap between the two is the reason the catalogue keeps growing.

Each entry also carries how well documented it is. A ferment with a confirmed microbial census and one recorded by analogy to a close relative are not presented as equally certain.

How do I find something when I do not know its name?

Start from the country and scan the list. Most people recognise the thing on sight or from its description within a few entries, because the substrate and the method are usually memorable even when the name is not — the radish one buried in a pit, the pink pickled turnip.

If the country page does not have it, that is useful information too: it means the ferment is not documented here yet, rather than that you misremembered it. Those gaps are the ones worth reporting.

Failing both, search by substrate. A ferment you remember as some kind of sour soybean paste narrows quickly, because the number of distinct methods applied to soy is small even though the number of names is not.
