Method
Ogórki kiszone (Polish Brine-Fermented Cucumbers)
- Small pickling cucumbers (firm, fresh) — 1 kg
- Fresh dill (heads and stalks) — a few stalks
- Garlic — 3–4 cloves
- Horseradish root — a small piece (flavour + crunch)
- Oak / cherry / blackcurrant leaves — a few (tannins for crunch; optional, traditional)

- Water — ~1 L (enough to submerge)

Wash cucumbers; trim blossom ends (blossom-end enzymes promote softening).
